The solid content recovery rate, total polyphenol and total flavonoid contents, composition and contents of polyphenol compounds of hot water extracts of black sapphire grape(Vitis vinifer, Sweet Sapphire) fruit were analyzed, and some antioxidant activities were investigated. The purpose of this study was to evaluate the potential use of antioxidant materials in functional cosmetics and to provide basic data for research in this field. The results are as follows. The water-soluble solid recovery rate of 1 g of black sapphire grape fruit hot water extract powder was about 87.1%(dry weight basis). In addition, the total polyphenol(18.23±0.10 GAE mg/g) and flavonoid content(4.25±0.08 RE mg/g) showed about 4.3 times more than the flavonoid content. In the composition and content analysis of phenolic acid and flavonoids by HPLC, the same phenolic acid and flavonoids as the standard material used as the control were not confirmed. DPPH and ABTS radical scavenging activity, SOD-like activity, and FRAP were all significantly increased in proportion to the treatment concentration, and it was shown to have antioxidant activity. Therefore, it is expected that sweet sapphire grape fruit hot water extract can be used as a natural antioxidant raw material for functional cosmetics as well as a raw material for skin beauty antioxidant food with antioxidant activity
