Abstract

本研究ではPilsner-typeビールの香気をガスクロマトグラフィー匂い嗅ぎシステム(GC-O)で解析し,同定した76成分の濃度を定量後,エタノール/水基材で再構成した.ビール中に閾値以上濃度で存在する成分は9成分に限られることを示し,高Odor Activity Valueで選抜した25成分モデルは,麦芽様香気,エステル,総香気量,対照ビールとの類似性を十分に再現できなかった.76成分再構成の結果,閾値未満を含む多数の微量成分が相乗的に寄与して香りの骨格を形成することを実証した.また酒の香りは,食べ合わせが引き起こす動的変化を視野に入れることで,はじめて実飲時の体験品質を説明・予測できることがある.官能評価により,乾燥スルメ併用時はビールで魚由来の金属様臭が顕在化し,清酒では抑制された.その原因物質は (Z)-1,5-octadien-3-one と同定し,その1 ng L−1 未満の高感度定量法の確立に成功した.乾燥スルメ併用時の生成量は清酒がビールの平均 1/7 と有意に低く,清酒の「食との相性」を成分面から初めて実証することに成功した.
