Abstract

佐賀県産タマネギは,貯蔵中に腐敗が進行する“貯蔵腐敗”が問題となっている.本研究では,タマネギの入庫時に,貯蔵性の優劣を非破壊で“予測する技術”の構築を目的とした.嗅覚官能評価の結果,“カビ・土様”のにおいが感知された試料は貯蔵腐敗が発生しやすい傾向が観察された.ガスクロマトグラフ質量分析計による分析の結果,指標となる揮発性有機化合物によって,貯蔵性の優劣を予測できる可能性が示された.
