Artificial Intelligence (AI) has gained growing importance in recent decades, revolutionizing industrial processes and enhancing efficiency, productivity, and competitiveness across sectors. Among these, the supply chain stands out as a complex and strategic domain where AI-driven innovations are reshaping traditional practices. This study investigates the impact of AI on supply chain management through bibliometric analysis, with a specific focus on the food supply chain. Bibliometric methods are applied to data retrieved from the Scopus database to map the evolution of AI research, identify major trends, and highlight emerging areas of interest. The analysis provides insights into the development of AI applications over time, revealing sector-specific advancements. The results offer a valuable overview of the current research landscape and serve as a foundation for future studies and practical applications of AI in supply chain contexts. Guidelines for future research activities are also derived.
